We'd all like to see 32 GB of RAM in our next smartphone. But how about putting two of these chips in a smartphone to support even larger LLMs?

You would need a larger smartphone chassis to do that. There's no space on smartphone motherboards for a second RAM chip.

10.7GB/s is finally getting into impressive territory.

    That's 171GB/s with 128-bit memory bus
    256GB/s with 192-bit
    342GB/s with 256-bit
    514GB/s with 384-bit
    685GB/s with 512-bit

That's getting into GDDR6 territory for low to mid range GPUs. If M3 Max was equipped with this, it would be even faster than the 576GB/s on the PS5 Pro.
